Easy White Chocolate Peppermint Fudge

There are certain times of the year when I like to do something special for my boys teachers and bus drivers.  Each year for teacher appreciation week I get their teachers a gift card to go out to eat.  I mean, if anyone deserves a night off without having to cook, it’s a teacher.  Then at the end of the school year, I also get nice gifts for the teachers as a way to thank them for such a great year with my kids.  Of course, I always like to get something for the bus drivers, too.  After all, they are responsible for getting my boys back and forth to school safely every day.

At Christmas time, I like to get festive when it comes to gift giving.  I love to make sweet treats for the teachers and bus drivers and based on the feedback I have gotten from them in the past, my baked goods are always a hit.  This year, the bus drivers and teachers are getting some delicious white chocolate peppermint fudge.  It’s easy to make and I know it’s going to be a big hit.

Here’s what you need:

  • 1 cup of Sugar
  • 3/4 cup of heavy whipping cream
  • 1-1/2 sticks butter
  • Pinch of salt
  • One 12 oz bag of white chocolate chips
  • 1 small jar of marshmallow fluff
  • 1 cup of peppermint baking bits
  • 1 Tablespoon peppermint extract

Peppermint Fudge Ingredients

Here’s what you do:

1. In a heavy bottom sauce pan, add butter, salt, heavy whipping cream, and sugar, then bring to a boil over medium heat.
2. Using a candy thermometer, wait until mixture reached 235-240 degrees (about 7 minutes).

3. Take your pan off heat and add in peppermint extract and mix well.
4. Add in marshmallow fluff and white chocolate chips, stir until melted.

5. Pour in your peppermint bits then pour your mixture into your pan.

6. Add a handful more of your Andes mints on top of your fudge.

7. Let set for a few hours in the fridge before you slice into small squares.

I am happy with the way it came out and I think that my boys teachers and their bus drivers are really going to love it.

    • A stick of butter is a quarter of a pound, or 4 ounces. Not sure how it is sold where you are, Ours comes 4 sticks to a one-pound box. Hope this helps.

  100. I’ve made this twice and followed directions to a “t”. I thought with the first batch my fluff was maybe too old. But the same thing happened with the second batch. After I melt the chips and fluff there seems to be excess butter floating in the mixture. Is this normal? I used 1 & 1/2 sticks per the recipe. (Sticks are standard 4 oz.)
