One of the great things about living in New England is the year round access to fresh seafood. Muscles are one of those things that are perfect any time and are defintely meant to be eaten by the dozen, but for some reason they just scream summer to me.  Muscles are pretty easy to get here in New England, so we steam them up all the time.

There are plenty of ways to prepare them, but we are major garlic lovers here in our house, so we make garlic muscles quite a bit.  If you’ve ever had muscles, you know they are best served with some bread.  We prefer our bread toasted and I will explain later why bread goes so well with muscles.

Garlic Mussels With Toasted Bread

Here’s what you need:

  • 1 garlic bulb
  • 1 lemon (juice)
  • 400 gram mussels
  • 1 tablespoon olive oil
  • 40 oz butter
  • 1/3 cup white wine
  • Parsley
  • Pinch of salt
  • Pinch of black pepper
  • bread

Here’s what you do:
1. Rinse your mussels with cold water and throw away the open ones.
2. Heat up your olive oil in a pan on the stove and heat it until the oil starts to make smoke.

3. Place the mussels carefully into the pan and leave them in there until they all open.
4. Next add in the white wine and butter.

5. After the butter melts completely add your garlic (be sure to chop up the cloves first so that your garlic is in little pieces), lemon juice, salt, and pepper.
6. Leave them about 3 minutes and they are ready to go!  Be sure to garnish with your parsley before you serve them.

Toast some slices of bread to enjoy with your mussels, plate the dish and serve.  The wine, butter and seasonings will make a wonderful broth that’s perfect for dipping that toasted bread into.
