I’m a bad friend. I totally stink at staying in touch with friends outside of commenting on their latest Facebook statuses. Once in a while I think to myself that I need to have all the girls over for snacks and a movie.  Since most of my friends are moms now, too, we like to keep it low key.  Recently I decided that enough was enough of this online friend only thing and had a few friends over to my house. Whenever there is a movie on at my house, good snacks are a must. I decided on chips and salsa for my get-together and ended up making some delicious Rainbow Summer Salsa. I haven’t met a person yet who doesn’t like chips and salsa.

Rainbow Summer Salsa

Here’s what you need: 

  • 6 Roma Tomatoes
  • 1 Can Black Beans, drained and rinsed
  • 1 Can Corn, drained
  • 4 Green Onions
  • ½ cup Red Onion, chopped
  • 1/3 cup Cilantro
  • 1 Orange Bell Pepper
  • 1-2 Limes
  • 1 tsp. Salt
  • 1 tsp. Cumin
  • 1 tsp. Garlic Powder

Here’s what you do:

1. Chop the green onions, pepper, onions, and cilantro and put into a medium bowl.

2. Add the beans, corn, and spices and gently mix well.

3. Add the juice of the 1-2 limes and mix well.

4. Refrigerate for 1-2 hours and serve with tortilla chips. That’s it!

This Rainbow Summer Salsa is a delicious and simple summer snack!

What’s a movie night without a good movie?  Thankfully Netflix has that part covered. They have so many perfect girls night in movies to choose from. A few of my favorites include Clueless, Legally Blonde, 50 First Dates and Pitch Perfect.  My friends and I happened to binge on Pitch Perfect 1 & 2 the other night and the Rainbow Summer Salsa was devoured in no time flat.

Whip up this Rainbow Summer Salsa and binge on some Netflix movies the next time you want to have a girls night in.  Or, well, anytime.
