If you know me in real life, you know that brinner (breakfast for dinner) is pretty common around here. I am not sure if breakfast foods just taste better in the evening or I am too lazy to get super fancy with food first thing in the morning. Whatever the reason is, we have brinner at least once a week in my house. Sometimes I like to get creative with it and recently I made some Froot Loops Waffles. I had some Froot Loops left over from a recent road trip to our condo that weren’t getting eaten, so I figured this was a great way to use them up.

As a  busy parent, there are some nights in which I just don’t have time to cook a big meal. My youngest son’s gymnastics class is held from 5-6 pm on Thursdays – talk about a bad time to have an after school activity – and by the time we get home, it’s 6:20 in the evening. I just don’t have the time to cook a decent meal and get the kids in bed on time when we get home so late. On nights like that I thank god for my Instant Pot.  Seriously, I don’t know how I ever got by without one! This Instant Pot Beef Stew recipe is ready in a little over a half hour and I love that I can make a home cooked meal for my family that doesn’t take too long to prepare.

This delicious pumpkin pie smoothie is perfect for the pumpkin lover in your life!

My husband and I have a running joke about the fact that my youngest son is just like me.  And in so many ways he is. From the fact that our feet are always cold to the fact that we both sleep with a fan and a sleep mask on every single night. Another thing we both share is our dislike for eating first thing in the morning. Frankly I could wait until lunch to eat, but obviously I can’t send my little guy off to school everyday without something in his tummy. That sort of forces me to get a little creative when it comes to a light breakfast. I generally make him a smoothie because it’s filling, but not overly heavy. As soon as the air starts to chill in late August, there is one thing on my mind. Pumpkin. A sure sign that it’s pumpkin season is when Dunkin Donuts brings back their pumpkin flavored munchkins and lattes.  Here in New England, that’s the unofficial start of fall, but let’s face it – I could eat pumpkin flavored things all year long. And sometimes I do. Recently I made some ah-mazingly delicious Pumpkin French Toast Sticks and they were a big hit with at least one of my children (I have one extreme pumpkin lover and one, well, not so much).

Anyhow, these Pumpkin French Toast Sticks are wicked easy to make and they don’t take long to prepare. We all like to send our kids off to school with a hearty breakfast in their tummies and this is one that I feel good about. My picky eater asked for seconds, so that says a lot…..
