Do you frequent Starbucks this time of the year? If you do, you probably know all about their Pumpkin Spice Latte! I’ll admit that I’m not a huge Starbucks fan (GASP!), but I do like the Pumpkin Spice Latte on occasion. The thing is, the closest Starbucks to me is about 20 minutes away and to get there, I drive past about 432 Dunkin Donuts shops on my way. So needless to say, going to Starbucks is rare for me. So, I decided to learn how to make pumpkin spice lattes at home. I think they come out really good and I save myself a bundle by making them myself. Check it out.
Here’s what you need:
2 cups of milk
2 tablespoons of canned pumpkin
2 tablespoons of sugar or your favorite sugar substitute
2 tablespoons of vanilla extract
1/2 teaspoon of pumpkin pie spice
1-2 shots of espresso (approximately 1/4 cup of espresso or 1/2 cup of really strongly brewed coffee if you’re like me & don’t have an espresso machine.)
Here’s what you do:
1. In a small saucepan combine the milk, pumpkin and sugar & cook on medium heat, stirring, until it’s steaming.
2. Remove it from heat and stir in the vanilla and pumpin pie spice.
3. Pour the mixture into a blender and mix for about 15 seconds until it’s foamy (of use some elbow grease and whisk it).
4. Once blended, pour it into a mug & top it with some whipped cream & nutmeg (or cinnamon).
It makes one serving, so you will need to double, triple, etc depending on how many cups you make. Enjoy!
