So it is summer time and that means fresh garden veggies. And lots of them. So the other day I found myself over run with zucchini.


So what to do with them….. Zucchini pie it is!!!!!! If you have never had zucchini pie it is a must. Taste like apple pie. It is super Yummy!!!!!!!!!!!!!


Super easy recipe.


Ok so that took one and a half zucchini….. Crap I still have a box full. Out to moms we go to use her food processor.


ChaChing!!! Shredded zucchini and lots of it. This can be frozen to be used in recipes like zucchini bread, zucchini brownies, zucchini bars, or chocolate chip cookies later!!!!!!

This is how I freeze mine. I load them up in a cup cake tin and freeze. Each cupcake is 1 cup of zucchini.


Once frozen I pop out and place them in a ziploc or rubbermaid container in the freezer. If I need 2 cups of shredded zucchini for a recipe I grab 2 frozen “cupcakes” !!

No even after doing this I have 5 left!!!!! The above container was the 2 huge ones shredded. So my next plan of attack is zucchini chips.

For this I just clean and thinly slice on my mandolin slicer. One recipe I coat with a thin layer of olive oil and sea salt and place in the dehydrator until they are crisp like a chip (each model will be different). These are great dipped in hummus!!!

The next I coat in coconut oil and toss with cinnamon and sugar!!! The kids love these. I first made them and just said here try this…… Sneaky mom move. They all said hey these are good. Ate them all!!!!! Then mommy told them what they were!!! They were shocked but asked for more!! If you have picky eaters do not tell them that the zucchini is in any of the recipes you make and I guarantee you they will eat it!! You can not taste it in any recipe that is a baked good 😉

  1. My stupid zucchini plants died this year, so no extra for me. Thankfully, it’s been on sale a lot in our markets lately, so I am not going without : )

    • You are not the first person to say that. It has been hit and miss with ours, but we have a huge garden

  2. I have got to try making the chips. The cinnamon and sugar ones sound delicious. Freezing the shredded zucchini in 1 cup portions is a smart idea. I will have to do that.

  4. We just made a zucchini apple pie and it was really good! I would have never thought adding the zucchini would be such a good pairing with the apples.

  15. Is it bad that I never realized that one muffin is a cup?! This is genius and so many ways to use that extra zucchini up. We love zucchini so this is a way to make sure that I get to use them all if I have some left over.

  16. That;s a great prep idea. We make zucchini bread in the winter to get extra veggies in our diet over breakfast, and this would help!

  21. What a great idea to freeze the zucchini! I just bought four large zucchini yesterday at a farm stand and made zucchini boats with two of them yesterday. I’m hoping to make zucchini bread soon!

  22. Zucchini is great! I shredded ours, put it in the freezer. Sometimes we have Zucchini Bread, other times I make Zucchini Brownies, and I pan fry the zucchini – drain the water as I go, add freshly shredded yellow zucchini, sliced onion, cut up tomatoes, and sprinkle parmesan cheese on at the end. It’s pretty good as a side.

    • Zucchini grows so well around here! It grows so well that if you leave your car unlocked, you don’t just have to worry about someone breaking in….you also have to worry about someone dumping their extra zucchini in your car as a “gift.”

  36. Genius idea. Freezing the zucchini is cups is so smart. I tend to freeze things in large groups and then wish I had smaller packages for smaller recipes.

    • I do this with mashed sweet potatoes. I have a muffin recipe that calls for 1 cup of mashed sweet taters so I will bake a tone and mash them and separate in one cup portions and freeze. 😉

  38. YES! Where have you been all my life? We started our own garden a couple of years ago and have zucchini EVERYWHERE! I’ve made breads and sauces but I am always on the lookout for more recipes. SWEET!

    • There are tons of recipes. Look up zucchini bars with cream cheese icing. They are to die for. My mom makes zucchini relish and cans it too

  46. Oh my gosh, I LOVE these ideas. I just bought a zucchini at the farmers market today. My zucchini didn’t grow in the garden this year sadly. I’m definitely going to go out and buy more zucchini from the farmers market tomorrow and using all of these ideas…I can’t imagine the pie tasting like apple pie or the cinnamon chips being good, but I’m willing to try them! lol

    • I’m telling you it is yummy!!!! My 10 year old step daughter is super picky and I just said here try. Didn’t tell her what either of the things were and she loved them.

  47. I’ve seen a lot of recipes for zucchini but I’ve never heard of pie or cupcakes. I’m so freaking curious right now.

  48. We love zucchini at our house. I really love to grill our zucchini. There is just something about that grill taste!

  55. I love freezing shredded zucchini, but never thought to put it in a muffin tin – smart! I think that I am going to make zucchini muffins today. The same exact things as zucchini bread, but easier for my kids to grab when they want a snack 🙂

  63. OMG zucchini… it’s like tomatoes where you either get a billion, or you get none. You have tons of recipes and good for you for using it all! I’m not sure I could venture to brownies with it – maybe a little too healthy for me, lol!

  87. I am so glad everyone enjoyed the recipe and hack for freezing shredded zucchini. I have been so busy with prepping and getting ready for the start of the school year and ballet competition season I had to figure a way to save the huge zucchini for later use. I am looking forward to fresh zucchini bread this winter 🙂 Today is spaghetti sauce in our house 😉 So much produce to deal with. Soon it will be the apple and peach trees
