So it is summer time and that means fresh garden veggies. And lots of them. So the other day I found myself over run with zucchini.
So what to do with them….. Zucchini pie it is!!!!!! If you have never had zucchini pie it is a must. Taste like apple pie. It is super Yummy!!!!!!!!!!!!!

Ok so that took one and a half zucchini….. Crap I still have a box full. Out to moms we go to use her food processor.
ChaChing!!! Shredded zucchini and lots of it. This can be frozen to be used in recipes like zucchini bread, zucchini brownies, zucchini bars, or chocolate chip cookies later!!!!!!
This is how I freeze mine. I load them up in a cup cake tin and freeze. Each cupcake is 1 cup of zucchini.
Once frozen I pop out and place them in a ziploc or rubbermaid container in the freezer. If I need 2 cups of shredded zucchini for a recipe I grab 2 frozen “cupcakes” !!
No even after doing this I have 5 left!!!!! The above container was the 2 huge ones shredded. So my next plan of attack is zucchini chips.
For this I just clean and thinly slice on my mandolin slicer. One recipe I coat with a thin layer of olive oil and sea salt and place in the dehydrator until they are crisp like a chip (each model will be different). These are great dipped in hummus!!!
The next I coat in coconut oil and toss with cinnamon and sugar!!! The kids love these. I first made them and just said here try this…… Sneaky mom move. They all said hey these are good. Ate them all!!!!! Then mommy told them what they were!!! They were shocked but asked for more!! If you have picky eaters do not tell them that the zucchini is in any of the recipes you make and I guarantee you they will eat it!! You can not taste it in any recipe that is a baked good 😉
