Homemade Pancake Mix

My kids are kind of fussy about food.  Actually let me rephrase – my eight year old is very fussy.  I can’t even begin to tell you how many times he’s missed dinner because he flat out refused to eat what I made.  And we’re not taking about anything out of the ordinary, either. It happened not too long ago when I make English muffin pizzas.  English muffin pizzas you guys!  Who doesn’t like those?  Anyways, I absolutely will not make a separate meal for him, so if he doesn’t like what I make – he doesn’t eat.  I will always leave him a plate and many times he’s come back later that night to have a few bites, but sometimes he hasn’t.

Anyhow, there are two meals I know for a fact he will eat anytime I make them. The first is tacos in a bag.  For a picky eater, that one baffles me.  The kid won’t eat a cheeseburger, but he’ll eat a taco in a bag complete with sour cream and seasoned beef.

But I digress.

The other thing he will eat with no arguments (and sometimes actually have seconds) is pancakes.  We have breakfast for dinner, ka brinner, at least once a week.  Since we go through so much pancake mix, I have been making my own. I save a ton of money by making a big batch of it instead of buying store ­bought mixes!  Plus this homemade pancake mix is a cinch to make and a great pantry staple.

Dry Pancake Mix Ingredients

  • 4 cups all­ purpose flour
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 1 tablespoon cinnamon (optional)

Here’s what you do:

In a large bowl, combine the flour, baking powder and soda, salt, sugar, and cinnamon. Whisk gently to combine. Transfer to an airtight container and store up to 6 months.

Makes approximately 4.5 cups dry mix.

To make the pancakes you will need to mix together:

  • 1 cup pancake mix
  • 1 egg
  • 1 cup milk
  • 1 tablespoon melted butter or oil

Combine pancake mix with egg, milk, and butter or oil. Stir in a mixing bowl until just combined (Do not over mix). Spoon mixture onto a buttered griddle on medium heat. Cook 2­ to 3 minutes per side until golden brown.

Serve and enjoy!

    I make pancakes by scratch also, and this is a great idea to mix up the dry ingredients ahead of time. How many pancakes or servings does your recipe make roughly? Also any idea if you could do this with wheat flour and does it change the measurements of anything?

    Having the premade mix is a great idea. Then you can add things to it when you make it (maybe not for your child). I used to keep a premade muffin mix. It is so easy to whip something up when the foundation is already there.

    I love pancakes! This is a great idea to keep homemade pancake mix on hand so you will always have something for a quick meal. Breakfast for dinner is my go to quick meal.

    That’s a great mix. I much prefer making my baked goods from scratch. There are too many preservatives in boxed mixes for my taste.

    I like the suggestion for a bit of cinnamon in the dry mix. I made homemade waffles for my brother when he visited a couple of weeks ago. He enjoyed them, but I think he really wanted pancakes. I’ll make up some mix ahead next time he plans to visit and give him all the flapjacks he wants. I’ve always been a picky eater, and can still remember the expression on my dad’s face when he told me I could go to my room for the rest of the evening if I wasn’t going to eat what my mom fixed, and I got up and went upstairs. Boredom was better than whatever it was that did not appeal to me that night.

    Pancakes are a huge hit in our house too. For normal families it’s just breakfast food, in our home it’s breakfast, lunch, dinner, dessert or afternoon snacks. That’s how well loved pancakes are, so I got used to making them from scratch, this is a nice recipe though! Thanks!

    My daughter…she does not like english muffin pizza…or chicken fingers…or french fries…or any other typical “easy” kid friendly meal. I love to make pancakes, but I never make a mix to have on hand, that would certainly be easier than from scratch every time!

    I have a confession. I love pancakes. Soft, light, fluffy and buttery pancakes. But I never cook them homemade I also buy a mix. I know, I’m terrible! You’ve provided a simple recipe that I’m sure tastes better than the boxed stuff!
