Pumpkin Waffles

Halloween falls on a Monday this year (le sigh), but if you want to surprise your kids when they wake up on Halloween morning, how about these Jack O’Lantern Waffles? I know, I know – getting up early on a Monday doesn’t sound like much fun, but it is a holiday after all, right? I love to watch my boys faces light up when I make them something fun like these fun waffles. The waffles themselves are pretty easy to make and my favorite part is that you can get as creative with them as you want. ย As you can see, I put littleย Jack O’Lantern faces on mine, but you don’t have to if you want to serve yours as plain pumpkins. ย Or you can even use different colored M&M’s. Even better, let the kids decorate their own – just have fun with them.

Jack O’Lantern Waffles

Here’s what you need:

  • 2 Cups all purpose flour
  • 2 Tablespoons white sugar
  • 2 Tablespoons brown sugar
  • 2 Tablespoons vanilla extract
  • 1/4 Cup vegetable oil
  • 2 eggs
  • Dash of cinnamon
  • 1 Tablespoon melted butter
  • 1 Tablespoon baking powder
  • Orange gel food coloring
  • 3/4 Cup milk
  • Non-stick cooking spray
  • Mega M&M’s to decorate your waffles with

Here’s what you do:

1. In a large mixing bowl, combine flour, white sugar, cinnamon, baking powder, and brown sugar then mix together

2. Add your eggs, milk, vanilla, vegetable oil, melted butter, and orange food coloring then mix well
3. Spray a non stick cooking spray on the top and bottom of your waffle maker
4. Pour your batter in and close lid, cook until timer light goes off (you might need to cook a minute longer)
5. Unplug your waffle maker and carefully remove waffle

6. Start decorating your waffle with your mega M&Ms, using green for the stem, and yellow for the eyes, nose, and mouth

7. Pour on a little syrup and enjoy!

Do you ever get fancy with your waffles or pancakes? When it’s Halloween or Christmas time, I like to get festive with my food & the kids really love it.
